Ein Shemer originated in Israel at Kibbutz Ein Shemer, where plant breeders sought apples capable of producing reliable harvests despite mild winters. Their work resulted in a vigorous, adaptable tree that has proven well suited to warm climates throughout the southern United States.

The tree grows with an upright, spreading habit and establishes quickly when planted in a sunny location. Each spring, its branches become covered with masses of delicate white blossoms that attract honeybees and other beneficial pollinators. Like many low-chill apples, Ein Shemer often begins producing fruit at a relatively young age, rewarding patient gardeners sooner than many standard apple varieties.

The fruit is medium-sized with smooth yellow to pale green skin that occasionally develops a light blush where exposed to the afternoon sun. While understated in appearance, the apples possess an appealing freshness that reflects their excellent eating quality.

The flesh is crisp, juicy, and pleasantly refreshing. Its flavor balances sweetness with gentle acidity, creating an apple that is mild enough for fresh eating while still possessing enough character for cooking. Ein Shemer can actually bear fruit in areas with no frost, as long as there is a long period of time below 45 degrees F! 200-350 chill hours; USDA Zones 7-10.
