Fig varieties available:

Alma

Developed in Texas, Alma is a productive fig that bears very sweet, medium-sized fruit with brownish skin and light amber to tan flesh. It is well suited to the heat of the South and is excellent for fresh eating, preserves, and drying.ChampagneChampagne is an LSU-developed fig selected for Southern growing conditions. It produces sweet, medium-sized fruit with yellow skin, amber to caramel-colored flesh, and a relatively closed eye that can be helpful in humid climates.

Green Ischia

Green Ischia produces small to medium-sized figs with green skin and an attractive strawberry-red interior. Its sweet, rich fruit and relatively closed eye make it an appealing choice for Southern orchards and edible landscapes.

Italian Honey

Italian Honey produces greenish-yellow fruit with soft, golden-amber flesh and a mild, honey-like sweetness. The fruit is delicious fresh and also works well for drying and preserves.

Olympian

Olympian is a productive, cold-hardy fig known for its notably large fruit. The figs develop purple-brown skin and sweet red flesh and are excellent for eating fresh or making preserves.

Tiger

Tiger is an LSU-developed variety bred for Southern conditions. It produces large, sweet brown figs—often noticeably larger than Celeste—with amber-yellow flesh and a partially closed eye.

Violette de Bordeaux

Violette de Bordeaux is a compact, productive variety bearing dark purple to nearly black figs with rich red, berry-flavored flesh. Its smaller growth habit makes it an especially good option for containers and smaller gardens.

Bill Cole

Bill Cole is a vigorous regional fig valued by Gulf Coast and East Texas growers. Plants in Zone 8b have reportedly recovered well after freezing to the ground, making this an interesting choice for growers who want a resilient, uncommon Southern selection. It is a productive regional heirloom for fresh eating and preserves.

End of The Road Pedro

End of the Road Pedro is a colorful, locally named collector selection linked to material contributed to the Stephen F. Austin fig collection. Its story and scarcity make it a natural conversation piece for fig enthusiasts.

Early Violet

Early Violet is an early-ripening dark fig suited to growers who want fruit before many main-season cultivars begin. Its earlier harvest can be useful in areas where late summer rain, pests or an early fall limit the crop. Fruit is generally described as violet-skinned and sweet.

Quarter Pounder

Quarter Pounder is a collector fig whose name emphasizes exceptionally large fruit. It has been maintained in the East Texas evaluation collection and will appeal to growers who prioritize fruit size and novelty.

Texas Everbearing

Texas Everbearing is a vigorous, long-bearing fig closely associated with the Brown Turkey group. It produces medium to large reddish-brown fruit with pink flesh and a mild, sweet flavor from early summer into late summer. Trees can crop on new growth after freeze injury, making them forgiving in variable Southern winters. Pick promptly in rainy weather because the moderately open eye can allow souring or cracking.
